Choosing the Perfect Wedding Cake

Up until the 1970s, most wedding cakes were a wedding-style fruitcake. Tradition gradually changed and today, wedding cakes come in all different flavors and consistencies. As well, in addition to the traditional “bride and groom” topper on the cake, many brides and grooms choose to include fresh flowers, ribbons, and other decorations to this item that is always a highlight of the reception.

Here are our Top Ten Tips for choosing the perfect wedding cake:

  1. Begin by collecting clippings of wedding cakes you see in bridal magazines or on company or personal wedding sites. A little research will give you an idea of why you have chosen these examples – perhaps all have the same shape or incorporate the same type of decorative elements?
  2. Don't feel you have to have a cake with more than one tier. A single layer cake can be just as gorgeous when properly designed even if you are having a large number of guests.
  3. If you know your guests are an eclectic group, consider having the different tiers of the cake be different flavors – chocolate, vanilla, marble – or perhaps even different types of cheesecake, as long as it is attractive and still structurally sound.
  4. Keep in mind the time of year when choosing a cake. For example, a mousse-based cake may not be the best choice for a summer wedding when the weather may be hot.
  5. Be sure you taste samples of every cake you are seriously considering. You want to be sure that you have picked cake that you enjoy, the quality is good and that your guests will also savor this special treat.
  6. If you plan to keep the top tier of the wedding cake to freeze for either your first wedding anniversary or the christening of your first child, remember to add at least 10 servings to the total number of guests that you need to provide cake for.
  7. If you are using fresh flowers and/or a topper from someone other than the cake supplier, provide written directions to all parties involved as to the details of when and where the cake is to be delivered and assembled.
  8. Don't forget to arrange for an elegant set of serving pieces to cut and serve the cake if the bride and groom or another member of the wedding party will be carrying out this task rather than the caterer.
  9. The bride and groom should decide beforehand if they are going to feed each other a bite of cake and if so, if they wish to make it a dignified ritual or if they wish to provide a moment of levity by deliberately making it messy.
  10. Consider the option of a cupcake-based “tree” lavishly decorated with fresh flowers and foliage to fill in the spaces.
